Hello, Summer! This Frozen Aperol Spritz Will Keep You Cool When It's Hot

It’s officially the first day of summer and to celebrate one of my favorite times of the year, I wanted to share a refreshing new-to-me cocktail recipe: the frozen Aperol Spritz. The Aperol Spritz is having a moment this year and I couldn’t wait to try this frozen version! Whether you’re lounging by (or in) the pool, enjoying dinner on the patio with friends, or just enjoying the extra daylight on these lazy, summer evenings this bright and boozy treat will surely help keep you cool. Frozen Aperol Spritz
1 Serving
3 ounces Prosecco
1 ounce Aperol
1 cup granulated sugar
2 lemons
2 oranges
8-10 ounces of ice
Halve the lemons and oranges. Cut one of the orange halves into slices for garnish. Squeeze the juice from the other lemons and oranges into a large bowl. Add the Prosecco and Aperol and mix to combine.
In a small saucepan, combine the 1 cup granulated sugar with 1 cup of water and place over low heat. Bring to a simmer and cook until the syrup is translucent, about 3-4 minutes. Remove from the heat and set aside to cool.
Once the simple syrup is cooled, combine 1 ounce (or less, if desired) of the syrup with the Aperol/Prosecco/citrus juice mixture in a blender or food processor. Save the remaining syrup for your next happy hour. Add the ice to the blender and pulse until the mixture is combined and slushy. Pour into desired drinkware (I use champagne coupes!) and garnish with the orange slices. Enjoy!
